Recently, I realized that I had gone through all my Single Serving Casseroles and needed to do some more freezer cooking. This time I wanted to do something with Chicken so I went to The Thriving Home Blog – they are experts at freezer meals! I chose two casseroles to make:

In the morning I placed the amount of chicken I needed for both recipes into my large crock pot with water to fill it up about half way.
Once the chicken was cooked, I poured off the broth, saving about two cups of it aside for later, into a pan and added some additional water to it.
The broth water was used to cook up the spaghetti in. While that was cooking, I quickly shredded all the chicken. Go here to see my secret weapon for quickly shredding chicken!

While the spaghetti was cooking for Chicken Spaghetti recipe, I assembled the Chicken Parmesan meals.

Now that the Chicken Parmesan was done, I turned my attention to the Chicken Spaghetti. This was a little more of a challenge as it was a much larger recipe and required the largest bowl I had to mix it all together! That took a little digging in my kitchen cupboards! Lo and behold I found one! Wonders never cease!
This recipe calls for putting everything together and mixing it including the spaghetti. So, I followed a tip given in the original recipe and threw some vegetables into the food processor and ground them up fine and just mixed them in for extra nutrients without disturbing the flavor. Below is a picture of my ground vegetables before I mixed them in.Once everything was mixed together thoroughly, I added that two cups of broth to the mixture that we saved from earlier to help moisten it up.
This recipe suggests mixing the shredded cheese in with all the other ingredients. I chose to use the shredded cheese as a topping.
This recipe produced six meals for two! I finished them off by putting on their lids, crimping the edges to seal them tightly and writing the contents name and how to cook them along with the month/date.
Results: Nine Chicken Casseroles Meals for Two!

Freezer cooking has sure served me well and made eating healthier and at home much easier!
