Freezer Cooking: Chicken Casseroles for TwoRecently, I realized that I had gone through all my Single Serving Casseroles and needed to do some more freezer cooking.  This time I wanted to do something with Chicken so I went to The Thriving Home Blog – they are experts at freezer meals!  I chose two casseroles to make:

Preparation

In the morning I placed the amount of chicken I needed for both recipes into my large crock pot with water to fill it up about half way.

Once the chicken was cooked, I poured off the broth, saving about two cups of it aside for later, into a pan and added some additional water to it.

Chicken Broth

The broth water was used to cook up the spaghetti in.  While that was cooking, I quickly shredded all the chicken.  Go here to see my secret weapon for quickly shredding chicken!

Assembling the Chicken Parmesan

While the spaghetti was cooking for Chicken Spaghetti recipe, I assembled the Chicken Parmesan meals.

Chicken Parmesan PrepI split up the shredded chicken for both recipes, and added the marinara sauce to the this recipe’s chicken and mixed it well.  Next, I mixed up the bread crumb topping as instructed in the recipe.

Chicken Parmesan PrepThen I split the chicken with marinara up between three of the mini containers.  Making sure to spread them out to cover into the corners and pressed down a little with the fork to pack it.

Chicken ParmesanI then spread the two different cheeses evenly over each one and finished up with the bread crumb topping.

Chicken Parmesan to FreezeI placed the lids on and crimped the edges well to seal.  Lastly, I added the instructions for cooking and month/year they were done.

Assembling Chicken Spaghetti

Now that the Chicken Parmesan was done, I turned my attention to the Chicken Spaghetti.  This was a little more of a challenge as it was a much larger recipe and required the largest bowl I had to mix it all together!  That took a little digging in my kitchen cupboards!  Lo and behold I found one!  Wonders never cease!

Chicken SpaghettiThis recipe calls for putting everything together and mixing it including the spaghetti.  So, I followed a tip given in the original recipe and threw some vegetables into the food processor and ground them up fine and just mixed them in for extra nutrients without disturbing the flavor.  Below is a picture of my ground vegetables before I mixed them in.Chicken SpaghettiOnce everything was mixed together thoroughly, I added that two cups of broth to the mixture that we saved from earlier to help moisten it up.

This recipe suggests mixing the shredded cheese in with all the other ingredients.  I chose to use the shredded cheese as a topping.

Finished Chicken Spaghetti

This recipe produced six meals for two!  I finished them off by putting on their lids, crimping the edges to seal them tightly and writing the contents name and how to cook them along with the month/date.

  1. I enjoy cooking and stocking up. I would have to make the casserole for more than two. May take time to make but really saves time in the long run.

  2. Both recipes sound delicious, but I’m really loving the chicken spaghetti one. Will definitely give it a try. I’ll probably make smaller freezer packs, since it’s just the hubs and I, but I love the idea of freezing ahead. Love this!
