One of Angie’s favorite recipe (and mine now) is Tasty Taco Soup! This is very tasty, filling and easy to make! It is especially nice this time of year when it is cold outside. This will warm you up! Gather the Ingredients
The ingredients are very simple: hamburger, canned beans, tomatoes, corn* and two seasoning packets! You will be able to print the recipe at the end of this post! What takes the longest is browning the hamburger! *Angie wanted to note that in order to cut some of the sugar content, they only use half a can of canned corn. She wrote a great post on carbohydrate counting to help manage diabetes here.
Brown the Hamburger and Get the Crock Pot Out!
Simply brown the hamburger and grab your crock pot! Once the hamburger is cooked thoroughly, put it in the crock pot along with all the canned items (with their liquids – except for the olives). Put the taco seasoning and ranch dressing packet on top!
Mix it all up and cook on low for a couple of hours.
Garnish and Enjoy!
The best part! Garnish with cheese, sour cream and tortilla chips or whatever you like!
Tasty Taco Soup
- 1 lb. Ground Beef Lean
- 1 can Pinto Beans with liquid
- 1 can Chili Beans with liquid
- 1 can Corn with liquid
- 1 can Rotel Tomatoes with liquid
- 1 can Sliced Olives drained
- 1 pkg Taco Seasoning dry
- 1 pkg Ranch Dressing Mix dry
Brown the ground beef.
Combine all the ingredients in the crock pot. Leave liquid with all the canned ingredients except the olives.
Mix the ingredients until combined thoroughly.
Cook on low in the crock pot for 3 or more hours.
Enjoy with any garnishments you like such as cheese, sour cream and tortilla chips.
